No no no no no. You are completely missing the concept of Wolverine.
The structure of his bones allows his body to constantly heal itself. Whenever he would die, his body quickly regenerates. Adamanteum is a powerful alloy, and it is implanted into his skull; making his bones nearly impossible to break. Nearly. In a Wolverine movie, it was shown that Wolverine's claws and bones alike could be sliced off by an extremely heated and powerful force, heated and hit with such force that the claws and either thrown from or melted off of Wolverine.
I believe that Thor could match both of these conditions, due to his Godly strength and his ability to control lightning. He could smash Wolverine's claws right out of their sockets, or simply electrocute him. However true this may be, though, Wolverine wouldn't ever be permanently dead. It'd take him a while, but he would, sooner or later, regenerate.
Thor is a God, in his respective story line. He will never age and will not die out. Seeing as Wolverine himself couldn't smash through Captain America's shield, I don't think you could use that as a valid argument as to why Thor couldn't, as neither could smash Captain America's shield. Thor would win in each battle, Wolverine would Regenerate, and in a few years it'd happen again.
It's, honestly, a battle of endurance. Who would be able to keep this cycle going, and still care about the fight enough to survive?
